Grilled Chicken Skewers with Pasta Salad
Perfect during the summer time, these chicken skewers are quick to make and will please the whole family.
700g chicken thigh, each thigh cut in to quarters
1 lemon, grated zest
1 clove garlic
1tspn olive oil
400g pasta (macaroni or any small shape)
1 punnet cherry tomatoes, halved
½ cucumber, peeled and chopped
½ cup fresh parsley leaves
Half a red onion, sliced thinly
100g feta, diced into cubes
1tbspn olive oil
In a non metallic bowl, combine chicken lemon zest, garlic, a pinch of salt and olive oil. Stir to combine.
Allow to marinate for at least an hour. If using wooden skewers, place in water to soak. Meanwhile, bring to the boil 2 litre of salted water and cook pasta until al dente, drain and rinse with cold water until cold.
Mix together pasta, feta, tomatoes, parsley, red onion, cucumber, olive oil and juice from half the lemon to make salad. Skewer the chicken and cook over a grill or BBQ, turning after 5 minutes and cook for a further 5 minutes.
Chicken is cooked when white throughout. Serve over salad with wedges of lemon if desired.
