Black Bean Beef & Noodle Stir Fry

In no time you can whip up this healthy, easy to make stir fry packed full of flavour. A great meal for mid week.


500g beef fillet steak, trimmed
750 grams fresh hokkien noodles
120 ml black bean sauce
100g snow peas, thinly sliced on diagonal
1 bunch broccolini
1/2-cup spring onion sliced thinly
1-tablespoon limejuice
1 cup of bean sprouts


If using un-prepared stir-fry beef strips, thinly slice the piece of beef across the grain into strips (this helps keep the meat tender as it cooks).

Heat a wok with 1-tablespoon vegetable oil. Add beef and cook until it browns, add black bean sauce and cook for a minute further.

Empty out in to a bowl. Cover to keep warm.

In a separate bowl arrange noodles and pour over boiling water, enough to cover them. Clean the wok and place over high heat once again with 1-tablespoon vegetable oil.

Add chopped brocolini and snow peas and cook until they soften. Add noodles, drained of water, meat with sauce, bean sprouts and lime juice.

Combine together in wok over high heat until all is combined. If stir-fry appears dry add ½-1 cup of hot water.

Serve topped with spring onions.

TIP: Make sure veggies are evenly sized to ensure they cook together evenly.
